20 Minute Vegan Pasta

You are going to love this healthy, easy vegan pasta! Packed with flavor


  • 2 tablespoons olive oil

  • 3 shallots or 1 onion, chopped

  • 1 bell pepper, chopped

  • 2 garlic cloves, minced

  • 1/4 teaspoon red pepper flakes

  • 8 ounces spinach leaves

  • A handful of fresh broccoli florets (about 3 oz)

  • A handful of cherry or grape tomatoes, chopped (about 3 oz)

  • 1/2 zucchini, chopped

  • 8 ounce linguine or pasta of choice (I used Penne

  • 1/2 cup of vegetable broth

  • Season to taste. I always add Goya Salad and Vegetable Seasoning


  1. Bring a large pot of salted water to a boil.

  2. Heat the oil in a large skillet over medium heat. Add the shallots or onions and cook until soft and caramelized, about 5 minutes. Stir in the garlic, red pepper flakes and seasonings.

  3. Add zucchini, broccoli and tomatoes. cook for 5 more minutes

  4. Add in the spinach and 1/2 cup of vegetable broth cook until wilted.

  5. Once the spinach is wilted add the cooked pasta, stir and enjoy!

3-4 serving depending on serving size.
