You are going to love this healthy, easy vegan pasta! Packed with flavor
2 tablespoons olive oil
3 shallots or 1 onion, chopped
1 bell pepper, chopped
2 garlic cloves, minced
1/4 teaspoon red pepper flakes
8 ounces spinach leaves
A handful of fresh broccoli florets (about 3 oz)
A handful of cherry or grape tomatoes, chopped (about 3 oz)
1/2 zucchini, chopped
8 ounce linguine or pasta of choice (I used Penne
1/2 cup of vegetable broth
Season to taste. I always add Goya Salad and Vegetable Seasoning
Bring a large pot of salted water to a boil.
Heat the oil in a large skillet over medium heat. Add the shallots or onions and cook until soft and caramelized, about 5 minutes. Stir in the garlic, red pepper flakes and seasonings.
Add zucchini, broccoli and tomatoes. cook for 5 more minutes
Add in the spinach and 1/2 cup of vegetable broth cook until wilted.
Once the spinach is wilted add the cooked pasta, stir and enjoy!
3-4 serving depending on serving size.
