Yes it is possible to make a delicious french toast without using egg. No flour is used to thicken the batter so this recipe is definitely healthy. The Chia seeds thickens the sauce. If you let the sauce sit for to long it will turn into pudding and you don't want that. The Chia seeds can be kept whole, or you can grind them up if you don't want them to be visible in the final product.
Ingredients
1 heaping Tbsp chia seeds
1/2 Tbsp of agave nectar, maple syrup (or sub for honey if not vegan)
1 cup unsweetened almond milk (or any non-dairy milk)
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
4-5 slices of bread (try to use a firmer bread to avoid being soggy, I went with a 7-grain bread
Instructions
Mix all ingredients except the bread in a large, shallow bowl. Place in the ridge for 10-20 minutes.
Preheat griddle (or pan) to medium heat (350 degrees for griddle) grease with vegan butter or coconut oil.
Dip each side of bread i the batter for about 20 seconds on each side. If your bread is dry, leave it in a little longer. If your using sandwich bread, it should only need 25-30 seconds total to soak.
Place on griddle and cook until golden brown on the underside. Carefully flip and cook until the other side is golden brown as well. 3-4 minutes.
Top with desired toppings, I went with my favorite strawberries and bananas. (coconut whipped cream would be good too)
Roughly 95 calories per slice of bread!
