Slow Cooker Stuffed Peppers

Slow cooker stuffed peppers are colorful and delicious. You can choose any color of your choice. If your not a fan of black beans you can always substitute with white beans, kidney beans or slow cooker pinto beans.

 

Ingredients

  • 4 large bell peppers, any color

  • 15 oz can black beans, drained and rinsed

  • 14.5 oz can fire-roasted diced tomatoes

  • 1 cup Minute Rice Premium

  • 3 teaspoons chili powder

  • 1/2 teaspoon chipotle chili powder

  • 1 teaspoon cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon dried cilantro

  • 1/2 cup water + 1/2 cup water in slow cooker

Instructions

  1. Wash peppers, cut off tops and remove ribs and seeds

  2. In a bowl, mix together beans, tomatoes, rice (uncooked), seasonings and 1/2 cup of water until well combined

  3. Stuff into peppers until they are filed to the top

  4. Add the other 1/2 cup of water to the bottom of slow cooker

  5. Carefully place peppers into slow cooker. filling side up

  6. Cover and cook on high or 2-3 hours or low 4-6 until peppers are tender and the rice is cooked
